Coconut Shrimp Recipe: Sweet and Delicious


INGREDIENTS

  1. 1 1/2  cups coconut oil, liquid
  2. 1 lb large shrimp, peeled and deveined Tail on is ok to use if you prefer
  3. Batter
  4. 1  cup gluten free panko
  5. 1  cup shredded coconut, unsweet
  6. 1/3 cup honey
  7. 1/2  cup coconut flour or ap gluten free flour
  8. 1 tsp cinnamon
  9. 2 eggs, beaten
  10. coconut shrimp in basket 2 vertical

INSTRUCTIONS

  1. Gather all ingredients, a large frying pan, and 3 bowls
  2. Add coconut oil to pan and bring to medium high heat
  3. To one bowl add the panko, honey, cinnamon, and coconut
  4. To the second bowl add the flour
  5. In the third bowl, add the beaten eggs
  6. Dip each shrimp in the egg mixture, followed by the flour, then egg again, ending with the panko mixture
  7. Add each shrimp to the pan and cook about 5 min
  8. Flip and cook for another 2-3 min, until golden brown
  9. Remove shrimp and allow excess oil to drain
  10. Cool and Eat Up!
